Today on our episode #410 of All in the Industry, Shari Bayer's guests are Rick Smilow, Chairman & CEO of the Institute of Culinary Education (ICE), and Lachlan Sands, President of the Institute of Culinary Education’s LA Campus. ICE, which the school is often referred to for short, is one of the nation’s most prestigious culinary schools, currently headquartered in NYC and with a second location in Los Angeles. This year, in 2025, ICE is celebrating a big milestone – its 50th anniversary. Rick's tenure began in 1995, when he acquired the predecessor school, Peter Kump’s New York Cooking School, which was founded in 1975 by Peter Kump, who was also the founder of the James Beard Foundation. Rick has been the CEO of ICE for 30 years. Lachlan, who has been at the helm of the LA campus since it opened in 2018, is the principal administrator responsible for the success of the school. Prior to working for ICE, Lachlan held positions as President, Director of Education, and Executive Chef. Today's show also includes Shari's PR tip to acknowledge achievements; Speed Round; Industry News on TimeOut's list of the world's 20 best cities for food now; and Shari's solo dining experience at Chef Jiho Kim's Joomak located within the Maison Hudson in Manhattan's West Village.
