This week we discuss book 3, chapter 8, "The Road to Isengard", from The Two Towers.
Today's "Food For Thought": Isengard Soup
When I pictured the bowl of Isengard all flooded out with wreckage and debris floating everywhere, it reminded me of soup. So I made vegetable soup and assembled some breadsticks into a 4-sided Orthanc to stand in the center. The tower was not super sturdy, but it was delicious.
Jamie's Vegetable Soup
-1-2 tblsp veg oil
-1 onion, chopped
-3-4 carrots, chopped
-3 celery stalks, chopped
-4 cloves garlic, minced
-2 cans diced tomatoes
-4 cups water
-1-2 large potatoes, cubed
-1 cup frozen peas
-1 tblsp parsley
-2 bay leaves
-1/2 tsp thyme
-1 tsp salt (to taste)
-ground pepper to taste
-1/4 tsp red pepper flakes (optional)
-1 can green beans
-1 can corn
Heat the oil in a large soup pot and add onions, carrots, and celery. Saute for 4-5 min and then add garlic, cooking for 1 minute.
Add tomatoes, water, spices, potatoes, and peas. Bring to a boil.
Lower temp and simmer for 20-40 min. Test veggies for doneness.
Add green beans and corn, simmer another 10 min.
This is a flexible recipe- use what you have! Add frozen stuff before the long simmer and canned stuff after. You can also substitute broth for half of the water if you want more flavor.
