Episode Description: Jessica B. Harris may have been born and raised in New York City, but she has Tennessee roots through her father and has spent much of her life split between homes in the Northeast and the South – specifically New Orleans. For more than fifty years, she has been a college professor, a writer, and a lecturer, and her many books have earned her a reputation as an authority on food of the African Diaspora, as well as a lifetime achievement award from the James Beard Foundation. A few years back, Netflix adapted her book, High on the Hog: A Culinary Journey from Africa to America , into a 4 part docuseries. And I’m very proud to say that she’s a longtime contributor to Southern Living with a regular column called The Welcome Table. This episode was recorded in the Southern Living Birmingham studios, and Sid and Jessica talked about her mother’s signature mac and cheese, the cast-iron skillet she’d be sure to save if ever her house were on fire, and her dear friend, the late New Orleans chef Leah Chase. Ethereum’s future isn’t just about scaling—it’s about securing the next generation of DeFi applications, bridges, and oracles. Restaking sits at the center of that revolution.
In this episode of Restaked: The Restaking Podcast, host Kieran is joined by Anthony Sassano—long-term ETH staker, operator, and host of The Daily Gwei—to explore how restaking is transforming Ethereum into the settlement layer for the world.
Topics we unpack:
The Bybit hack: What it reveals about DeFi security and censorship risks
TradFi’s stealth takeover: How institutional players are moving in quietly, and why they’re bullish on Ethereum
Restaking reality check: Why only a handful of AVSs will deliver sustainable yields—and where the real value will flow
The Ethereum Foundation: How it’s evolving to meet the needs of a multi-chain, restaked future
The Layer 1 wars: Why alternative L1s will struggle as Ethereum’s L2s and restaking infrastructure mature
Moving beyond speculation: What it will take to onboard billions into crypto—and why DeFi’s next chapter is being written now
Anthony Sassano is a leading voice in the Ethereum ecosystem—a long-term solo staker, ETH pool operator, and host of The Daily Gwei, where he delivers technical insights on Ethereum’s development. Known for his deep understanding of staking, protocol infrastructure, and institutional adoption, Anthony brings a balanced, authoritative perspective on Ethereum’s long-term trajectory. In this episode, he unpacks the Bybit hack, the evolution of restaking, and why institutions are doubling down on Ethereum’s future.
Tune in for a comprehensive analysis of where smart money is heading and why the fundamentals of Ethereum continue to strengthen despite market volatility.
