“We’re going to talk about another very important macronutrient and that would be “fat”. Fat is necessary. We have to eat small amounts of fat. There are some kinds of fats like fatty acids which the body cannot produce on its’ own. That’s why we have to make sure to introduce them with our diet. Just as all carbohydrates are not created equal, similarly, not all fats are created equal. So we are going to learn about the fats that are actually helpful as well as the fats which are not. In fact, the Mediterranean diet and our Sicilian version of the Mediterranean diet is a high fat diet. These diets may be high in fat but they are actually high in “good” fats. Some examples of our favorite high in fat ingredients are avocados, olives, and nuts… “
