Dry rubbed lamb ribs with quick chilli sauce Cook time: 30 minutes Prep time: 20 minutes Serves: 6 600g lamb spare ribs 5 star anise 1 tbsp salt 5 bay leaves 2 tbsp Dijon mustard 5 tbsp house rub Mike's house rub 1 tbsp each mustard, cumin, coriander seeds, toasted and crushed 1 tbsp mustard powder 1 tbsp garlic powder 2 tbsp sea salt 1 tbsp smoked paprika 1 tbsp dried mixed herbs 2 tbsp brown sugar ½ tsp cayenne pepper Quick chili sauce 2 red chili, deseeded and chopped pinch of allspice 1 can whole peeled tomatoes 3 Tbsp cider vinegar 1 Tbsp honey ¼ tsp ground allspice pinch salt Preheat oven to 190*c or BBQ. Place ribs, star anise, salt, bay leaves and peppercorns in a large pot and bring up to the boil, reduce the heat and simmer for 20 minutes. Drain well and turn ribs out onto a tray. Rub ribs with Dijon mustard and sprinkle dry rub over. Roast or place into BBQ for 30 minutes to hot smoke. Arrange ribs onto a large serving dish either whole or cut into fingers and spoon over chili sauce For Mike's house rub, mix all the ingredients together. Most of us know the feeling: the alarm rings and you either spring out of bed ready to face the day, or you groggily fumble for the snooze button. But why does waking up feel so different from day to day? New research published in the journal Current Biology has revealed what’s happening inside the brain during those first few seconds of waking up. Using high-density EEG (electroencephalography) to record over 1,000 awakenings, they discovered a consistent pattern of brain activity that helps explain why we feel alert or not after sleep. The researchers found that waking up is not like flipping a switch. Instead, it’s more like a wave rippling through the brain, with certain regions turning on before others. The found that: The front of your brain (prefrontal cortex) wakes up first. This area is responsible for decision-making and attention. The back of your brain (visual and sensory areas) lags behind by a few seconds. If you're waking from deep (NREM) sleep, your brain shows a brief burst of slow brain waves (delta waves), a kind of transition signal before ramping up to faster, more alert-like activity. Waking from REM sleep, by contrast, skips the slow-wave burst and jumps straight into high-frequency activity. The team also found that this order was consistent across different types of awakenings, whether spontaneous or caused by an alarm. Participants who had a strong slow-wave signal (linked to a type of brain wave called a K-complex) just before waking were less sleepy once awake. It seems that a little bit of “sleep-like” brain activity right before you wake up might help you feel more alert. These waves seem to act like a “reset” signal that prepares your brain for the shift into wakefulness. But too much of another type of slow brain activity (called “type II” slow waves) right before or after waking? That was linked to feeling groggier. In short: Helpful slow waves (type I): Lead to more alert wake-ups. Unhelpful slow waves (type II): Make you feel sluggish. So, how can you apply these findings to your own mornings? Here is what the research found: 1. Wake Up at the Right Sleep Stage Use a sleep tracker or app that wakes you up during light sleep (N2 stage) if possible. Waking during REM or deep sleep increases the chance of grogginess. 2. Use Gradual Alarm Sounds Loud, jarring alarms can skip over the natural slow-wave transition, especially in REM sleep. Try gentle sounds or wake-up lights that simulate sunrise to help your brain transition naturally. 3. Consistency is Key Stick to a regular sleep schedule. The more your brain is in sync with your circadian rhythm, the more likely it will initiate a healthy wake-up sequence. 4. Get Moving Quickly Since your brain finishes “waking up” from front to back, physical movement (even just sitting up or stretching) can help speed up the rest of the brain’s activation. 5. Don’t Snooze Too Much Snoozing might send your brain back into deeper sleep stages, increasing the odds of waking up groggy when the alarm rings again. It seems almost impossible for people to be bored these days. Everywhere you look, people are staring at their smartphone screens whenever they find themselves with more than a few seconds to spare. New research published in the Journal of Neuroscience suggests we should put our phones down as it finds that letting our minds drift into a daydream actually helpsyour brain to learn. Drawing inspiration from studies on local sleep, where certain brain regions seem to briefly nap while the rest of us stays awake, the researchers theorised that daydreaming could reflect a brain state similar to sleep, allowing it to consolidate information and form memories more efficiently. To put this to the test, the researchers asked volunteers to perform a probabilistic learning task that involved detecting patterns and learning without conscious effort. As the participants worked, their brain activity was monitored using high-density EEG (electroencephalography). After the task, participants self-reported how focused they had been. The results were surprising: those who admitted to letting their minds drift off showed improved learning, especially in the early stages of the task. Not only did they perform just as well as the fully focused group, but their brain activity revealed signs of a sleep-like state, without them ever closing their eyes. The researchers suggest that mind wandering might allow the brain to shift into a mode where automatic, associative learning takes over, similar to how we absorb information while dreaming. In this state, the brain isn’t focused on immediate, conscious problem-solving but instead on processing in the background which could be especially useful during tasks that don’t require intense focus, such as folding laundry or going for a walk. This research adds to a growing body of research challenging the idea that focus always equals better learning. Instead, the suggestion is that the brain is always working, even when it seems like we’ve checked out.” The researchers were quick to point out that mind wandering can hurt performance in situations that demand sustained attention or precise action, like when we are in a meeting at work. But in moments of low-stakes repetition or routine, like waiting for a bus, washing the dishes or taking a walk, letting your mind roam could be exactly what your brain needs to process what you’ve recently learned. So next time you find yourself gazing out the window or thinking about dinner during a mundane task, don’t feel guilty. A preliminary report into last month's Air India crash has raised more questions around the cause of the crash. The London-bound plane crashed within a minute of take-off, killing all but one passenger on board. Early findings by India’s Aircraft Accident Investigation Bureau show the fuel control switches in the cockpit had been cut off. On Friday afternoon, when I heard that Ray Chung, Mayoral candidate for Wellington, was going to appear with Ryan Bridge on Newstalk ZB’s Drive to discuss the gossipy email he sent regarding Tory Whanau, I thought good on him for fronting. 7 minutes and 20 seconds later, I was as speechless as Ryan Bridge. What a bumbling, embarrassing trainwreck of an interview. First there was the comment it had been a hard couple of days for Ray Chung since the email was publicly released. Well, yes, when you’re running in a local body election and caught spreading salacious gossip it can make for a tough day. But considering Mr Chung had been on the phone since 4am on Friday, and spent the day talking to media about the fiasco, you’d expect him to have crafted a tight message by 5pm. I expected him to apologise for spreading gossip, clarify what happened, accept responsibility. You known, to demonstrate some, well, leadership potential. Some mayoral potential. I’m a big advocate for voting in local body elections. I want to have a say in who runs my city. I know it’s not the cool thing to do and most people can’t be bothered. But I love and appreciate everything my city has to offer and I want it to be a great and affordable place to live. But to get people to vote we need candidates who are articulate, smart, and decisive leaders. We need people who understand the political environment, can work with others, and know how to get things done. Back in 2022, Wellington City councilor Iona Pannett despaired at how toxic and negative the campaigning was in the local body elections. More recently Tory Whanau has called politics an “ugly place”. Some of the issues highlighted by Crown observer of Wellington City Council, Lindsay McKenzie, are that it’s an overwhelmed council, there is public criticism by elected members, and dysfunctional relationships. If there was ever a time Wellington needed a candidate who can convince constituents they can as mayor bring this council together and make it function, then it’s now. And yet, here we are. Ten days after candidate nominations opened for local body elections and the dirty politics has kicked off. Did Ray Chung write that email out of genuine concern for his Mayor? Probably not. Has the email’s release being timed to hurt Ray Chung’s campaign.Probably yes. So, no one looks particulargreat do they? Wellington deserves better. This isn’t a big enough faux pas for Chung to take himself out of the race. But if he’s going to continue, can I suggest he takes a simpler approach to dealing with issues. When the receipt (as the kids say these days) is there for all to see, apologise and take accountability. Three-cheese French quiche Cook time: 30 minutes Prep time: 10 minutes Serves: 6 people 2 sheets savoury pastry 6 eggs 1 cup cream Salt and pepper Cheeses cut into small dice. These can any three you wish to choose or better still use up. Camembert Gorgonzola Tasty cheese Preheat oven to 180*C. Grease a 26cm flan or quiche tin. Take the pastry and line the base of the tart. The tart will be bigger than the pastry so join the two pieces of pastry together to make a big enough piece. Lay over some grease proof paper and press into the corners. Fill the tart with some baking beads, chickpeas or similar and blind bake for 20 minutes. Removing the beads and paper and allow to cool after this time. Make up the filling mixture by beating the eggs and the cream, then season, easy! Pour the mixture into the tart cases and then sprinkle over the cheeses. Place into the oven for a further 30 minutes. Serve hot, warm or cold. You’ve probably heard the old saying: “Don’t eat cheese before bed, or you’ll have nightmares.” But is there actually any truth to it? A new study published in the journal Frontiers in Psychology suggests there might be. Researchers surveyed over 1,000 volunteers about their sleep, dreams, and eating habits. They found that people with worse symptoms of lactose intolerance (people who don't digest dairy well) were more likely to experience more frequent, distressing, and persistent nightmares. This research builds on earlier studies, including a 2015 Canadian investigation into 'food-dependent dreaming,' which found nearly half of respondents linked late-night eating to disturbing dreams. Dairy products and sweets were the most commonly cited culprits. Scientists think there are a few possible reasons why dairy and disturbing dreams could be linked: Sleep Disruption from GI Symptoms : Gastrointestinal discomfort, a common result of lactose intolerance, is known to cause fragmented sleep. These micro-arousals may enhance dream recall and increase the intensity or unpleasantness of dreams. Anxiety and Arousal : GI issues may elevate baseline anxiety levels, which are associated with an increased frequency of nightmares. Additionally, trigger foods may stimulate the sympathetic nervous system, leading to sleep disturbances during REM. Neurochemical Hypotheses : One theory involves tyramine, a naturally occurring compound in aged cheeses derived from tyrosine (and some other foods including cured meats and fermented foods). Tyramine is known to promote the release of noradrenaline, a neurotransmitter implicated in REM sleep and dream modulation. However, other high-tyramine foods like chocolate do not have a reported link to nightmares, suggesting this mechanism is inconclusive. Interestingly, the study also suggested that we might be just blaming cheese when it's not actually the cheese's fault! A previous study from 2015 found nearly half of participants thought eating late at night gave them weird dreams. Dairy and sugary foods were the top suspects. But it’s also possible that this idea has stuck with us because of an old wives’ tale that set up a nightmare mindset before bed. What we do know is that going to bed with a full stomach, especially after fatty or rich foods, can lead to poor sleep and more dream recall, whether you’re eating cheese, chocolate, or pizza. So if you are having strange or unpleasant dreams, the research suggests: Avoid eating right before bed. Skip foods that make your stomach feel funny or that you find hard to digest. Discussions are taking place over the future of the Census, and one expert is warning there's a factor the Government hasn't considered. Last month, Minister Shane Reti announced the five yearly data collection will be scrapped - instead, he plans to use administrative data from Government agencies and an annual survey. Wellington barrister Graeme Edgeler says the Data and Statistics Act requires a a periodic Census. As the All Blacks took to the field at Forsyth Barr Stadium in Dunedin last night to stagger over the line against the French, I thought about the calls I had on Marcus Lush Nights on Friday, talking about the future of our large stadiums - and in particular of Forsyth Barr Stadium and Wellington’s Sky Stadium. It doesn’t seem to matter which city you’re in across the country, stadiums are problematic. Auckland continues its decade-old debate about whether we need a new multipurpose waterfront stadium and now, what to do with Western Springs. Christchurch rate payers are unhappy about the cost blowouts for their new stadium, Te Kaha - although when it opens I reckon they'll be won over and pretty happy. Wellington has a stadium that’s not well designed for rectangle sports - rugby or football - suffers for the city’s inclement weather and rarely looks full. Te Kaha has them all spooked. As fans took their seat at Forsyth Barr last night they may have wondered how likely, after Christchurch’s shiny new stadium opens next year, they will be to see concerts from artists such as Pink and Ed Sheeran, or All Black tests, in their city again. And they are right to be worried. There is only so much sport to go around, and with more global acts skipping New Zealand, competition is only going to get tougher. We tend to think of large outdoors stadium as a must for a city of a certain size - a required piece of civic infrastructure like a library, theatre or art gallery - but perhaps we’re more ambitious than we need to be. Does the South Island really need two covered stadiums? Perhaps not. But if you live in Christchurch you’re thinking about Christchurch, not contemplating what it means for the stadium down the road. Forsyth Barr was conceived before the Christchurch Earthquake, opening in time for the 2011 Rugby World Cup. So Forsyth Barr always expected to compete with Christchurch, and obviously there was confidence it could. You could say Dunedin has had an unexpected advantage over the last 14 years. But now with competing stadiums, it’s on the council and stadium management to step up and find a way to ensure the stadium remains an asset for the city and not a white elephant. The saying ‘built it and people will come’ doesn’t apply to stadiums. You need to convince people to choose your stadium and your city to perform in, and then convince the locals to attend. Everyone has a role in making stadiums work. Look at Eden Park. The recent change to allow up to 12 concerts a year to be held there has seen a surge in fondness for the place - even if it’s mind-blowing how long it’s taken to happen. The benefit are obvious on show weekends. Last night looked like a great night in Dunedin. The crowd in full voice, clearly enjoying the entertainment - both the stadium and the All Blacks got the job done. Gee, I hope it lasts. After making an impression on millions around the world - and making an appearance in Wellington in 2024, 'The Art of Banksy' exhibit is set to hit Auckland. Banksy is one of the world's most famous artists with a significant global following, but his identity remains unknown - despite exhibitions of his work selling out and attracting interest. Banksy didn't personally curate this exhibit, but producer and curator Michel Boersma says he's had dealings with the artists. "People have a view of Banksy as this sort of Robin Hood figure in general - we've done this in 90 cities around the world and in general, you get this whole Robin Hood kind of thing. We are dealing with collectors and collectors who buy art, often direct from Banksy - art that he's created to sell for his own lifestyle."
